Walking along the gentle path of ru Courthod, tackling the more challenging ascent of Vallone di Nana or wandering along ancient Walser paths from Mascognaz to Resy... these are just a few of the many opportunities for easy trekking in Val d'Ayas that may hold surprises in store for lovers of good milk!

It is the magnificent colours of the high-altitude meadows that tell us how important the work of our breeders is: splendid violets, the soaring mazzolina grass and the yellow and pink tones of the leguminous plants, so important for feeding the animals. So let us pause to appreciate the intensity of colour and the sweet scents of an alpine clover forest, and let us not hesitate when the opportunity arises to get close to the splendid losa-roofed stables used during summer grazing by our breeders.

Their presence is indispensable, and in addition to maintaining the landscape, it allows us to enrich the Valle d'Aosta's food and wine offerings with unique cheeses: Fontina PDO in primis and the 'crispy' lean tome cheeses in the wake of tradition. It is true that the last ten years have seen the emergence of new agricultural realities and excellent goat's and sheep's milk cheeses: two places above all to mark in your diary? Pallenc and Alpe Metsan.
